Lately.

We’ve been busy. Really busy.

We took Caroline to her first Red Sox game.

We flew on a plane. To and from Boston. {She doesn’t have her own seat, it was just a cute photo op.} Caroline’s fifth trip! At this point she has flown more in her life than I did in the first 18 years of my life. Crazy!

We’re gearing up for my parents to come visit tomorrow and another wedding this weekend!

This is what happens when you give a Caroline Chipotle guacamole with her dinner.  Girlfriend really gets into her food.

Munchkin Meals {Quick and Easy}

This week, Brittany asked us to share our quick and easy go to meals for our little munchkins.  Now that Caroline is a year old, we let her eat anything and everything.  For us, the key to having a good meal on the table for her three times a day is preparing food ahead.  That way, when I get home from work, we can play for a little while and all I have to do is warm her food instead of cook it from scratch.

Here’s what I keep on hand:

fresh fruit—all I have to do is cut it up and serve
cheese sticks—open and serve
frozen peas—boil in water in the microwave for a few minutes
English muffins—toast and top with almond butter or cheese
frozen ravioli—can cook a few at a time and serve
tomatoes—cut and serve
cucumbers—cut and serve
avocado—cut and serve
hummus—spread on bread and serve
organic whole milk yogurt—mix with fresh fruit and serve
sliced roasted turkey—Whole Foods roasts turkey breasts and slices it to order. I pick up about 1/4-1/2 pound per week for lunch for us and for Caroline.

A few more things in the freezer:

Applegate Naturals Chicken Nuggets—so. I wasn’t going to give Caroline chicken nuggets. But, they’re quick and easy if I didn’t have a chance to defrost and cook an organic chicken breast ahead of time. 
Dr. Praeger’s Kids Littles—I LOVE these! They’re basically little potato patties with other veggies mixed in. So far Caroline has tried broccoli and spinach and I have the sweet potato version in the freezer.
Dr. Praeger’s California Veggie Burgers—A great alternative to meat!
Applegate Naturals Turkey sausage—these come frozen and fully cooked—they only need to be heated in the microwave for 90 seconds. Perfect!
Van’s frozen waffles—a great breakfast topped with almond butter and served with fresh fruit.

As a working mom, I have no choice but to keep things quick and easy during the week, but on the weekends we can slow down a bit and make eggs in the morning and serve Caroline the food that we’re eating for lunch and dinner.

Gruyere Grilled Cheese with Apple Salad

Ordinarily, Caroline and I run errands together on Sundays.  This week, our girl was running a fever, so I went and ran errands on my own while she hung out with Jeromy.  On my way to Trader Joe’s, Jeromy called and said he was going to make us lunch, a recipe he just read in Bon Apetit.  He gave me the ingredient list, I picked them up and I high-tailed it home.

When I walked in the door, Caroline was napping and Jeromy set to work.  Naturally, Caroline woke up just as Jeromy was putting our food on plates.  So we gave her a snack, sat her between us and hoped she’d let us enjoy our meal.  As long as I held her in one arm and ate with the other, she was okay with it.  She’s a benevolent toddler.

Gruyere Grilled Cheese with Apple Salad

Prep Time: 10 minutes

Cook Time: 20 minutes

Ingredients (serves 2)

  • 4 tablespoons unsalted butter, divided
  • 3/4 cup thinly sliced shallots
  • 1 teaspoon fresh thyme leaves
  • kosher salt and freshly ground pepper
  • 4 thick slices of rustic sandwich bread {we used Rustic Pane Bello from Trader Joe’s}
  • 8 oz. Gruyere, sliced 1/8 inch thick
  • 2 cups arugula
  • 3/4 of a Fuji {or a pink lady} apple, cut into 1/4 inch slices, then broken into bite-sized pieces
  • 2 tablespoons freshly squeezed lemon juice
  • 2 tablespoons extra virgin olive oil

Instructions

Preheat the oven to 400 degrees.

Prepare the ingredients. If you have a mandolin, I recommend using that to slice the cheese in a uniform thickness. {If you slice the cheese first, subsequently slicing the shallots and apples will help clean the cheese off of the blade.}

In a small saucepan over high heat, melt 2 tablespoons of butter. Once it begins to foam, add the shallots and thyme, then season with salt and pepper. Stir continuously while cooking until the shallots begin to soften and caramelize, this should take about 4-5 minutes. Remove the shallots from the pan and set aside.

In the same pan, add 1 tablespoon of butter. Swirl to melt the butter and coat the pan. Add two pieces of bread to the pan and toast until golden brown and crisp on the bottom. Set aside the two pieces of bread, toasted side down, on a rimmed baking sheet, then repeat the process with two more pieces of bread.

Top the slices of bread with the cheese evenly, then cover with the shallots.

Place the baking sheet in the oven and bake for 7-8 minutes, until the cheese is melted.

While the cheese melts, combine the arugula, apple slices, lemon juice and olive oil in a large bowl. Season with salt and pepper then toss to coat.

Once the cheese is melted, make a sandwich with one slice of bread with cheese and the other with cheese and shallots.

Serve sandwiches alongside the salad.

Sunday was dreary, but the flavors on this dish were bright and flavorful.  If I were eating with my eyes closed, I would have thought it was a spring day.  {Does anyone eat with their eyes closed?}

The sandwich has a remarkable richness that the lemon juice in the salad cuts right through.

How do you find time for everything you need to do? What falls off your radar?
I make lists, lots of them. Cleaning always gets pushed off in favor of something more fun. I grocery shop/run errands/do laundry on my lunch break most days. I find creative ways and times to get things done that HAVE to be done in order to make more room for the fun stuff.

Describe your childcare arrangement.
My daughter has been in daycare since she was 10 months old. She’s almost 2 now and still loves it.

What does the word balance mean to you?
Balance is what I am always striving for, yet rarely find. It’s a constant juggling act. Some days it goes in my favor, some days not. I just do the best I can do balance everything each day, knowing that tomorrow is a new day and a new chance.

What is your best time saving tip?
Tackle things as a group, it makes the work go faster!

What is your favorite go to meal to feed your family during the week?
Our easy, quick, go-to is usually nachos – that way everyone can pick their own toppings, less chance for whining. Breakfast for dinner is also a favorite!

Would you like to take a nap?
I’m napping right now. It’s called multitasking.

What are your top two pros and cons of being a working mom?Pros 1. I get to have adult interaction and feel like I am needed, beyond just by my family. 2. I am contributing financially so that we can do more of the fun things

Cons 1. I miss my girl like crazy and feel like I don’t always get enough time with her during the week. But it makes the weekends that much sweeter. 2. There never seems to be enough hours in the day

Did you pump at work? If so, what was your experience?

Do you have any advice for a new mom who is about to go back to work?
Pick a daycare that you feel comfortable with. Call a million times a day if that helps you deal with it. Make sure the time you spend with your child is quality.

Caroline’s First Birthday Celebration(s)

Confession: I started thinking about Caroline’s first birthday party when she was six months old.  I knew we would take the day off of work to spend with our girl and I wanted to have a fun activity to do that would be fun for everyone.  The zoo seemed like the perfect idea!

After Caroline opened a few presents and had her morning nap, we picked up some sandwiches, loaded the car with all of her grandparents and the stroller and took off for the zoo! First things first: lunch.

Then we were off to check out the animals! Caroline loved the big ones, like the tigers.

And she practically jumped out of my arms to get her hands on the armadillo.  Good thing there was a thick pane of glass to keep her from it.

She was also a huge fan of the monkeys.  Which makes a lot of sense, since she is our little monkey.

After a few hours at the zoo, our little monkey had enough and we headed home.  We continued the celebration with dinner, her grandparents and cupcakes. She liked her cupcake but only ate a little bit before declaring that she was all done {“aaahhhhl duh!”}.

The next day, we had planned an outdoor party for family and friends.  Surprising even myself, in the two weeks leading up to Caroline’s party, I completed a couple of projects from my Pinterest board. 

First, I made nine tissue paper poms to decorate outside.  {I’m going to hang a few in Caroline’s room and in her playroom instead of throwing them out.}

Then, I sewed the bunting.

And, I made a video of Caroline’s first year.  I would share it with you, but it’s 20 minutes long.  We love it.

Finally, my mom and I made the cake!  A beach ball cake for a beach themed party :-)

The cake was baked in a 16 inch pan, which was incredibly intimidating to flip onto a cooling rack. Actually two cooling racks, one was not big enough.  My heart was pounding, but I made it happen.  We doubled a yellow cake recipe that my mom has been making for my birthday since I was little, frosted it with cream cheese frosting and covered it with cut up fruit to look like a beach ball. 

For the party, I put together a menu that we could have done ahead of time. I didn’t want to be stuck in the kitchen or have Jeromy stuck at the grill for the whole party.  We served: pulled pork sandwiches, fried chicken, potato salad, broccoli slaw and watermelon.

We had such a great time celebrating Caroline’s first birthday.  I’m pretty sure she did too!
