Top 10 Recipes of 2012

It’s hard to believe that 2012 is coming to a close today.  We’ve had an action packed year! I know I don’t share as much of our lives on here as I used to and I hope you can forgive me for that. I started to shift my blog away from food and more towards life but realized that 1) we’re not all that interesting 2) I value my privacy and the privacy of my family.  Sounds ridiculous to say that on a public blog, doesn’t it? But it’s true.  It also explains why there haven’t been any photos of Caroline recently, and there won’t be many in the future either.  This blog, my hobby, reflects a fraction of my interests and my life.  I absolutely love being able to share things in this way and have some really fun ideas for 2013.  I can’t wait to get started.

No, no, not Caroline.

But The Splattered Apron! I can’t believe I’ve been at this blogging thing for two years already.

I’ve learned a lot in the past two years, I’m embarrassed to even show pictures from when I first started.  So instead, why don’t we take a look at the 10 most popular recipes?

Thinking back over the past two years, I am filled with such gratitude.  From my wedding to my pregnancy, to the birth of my daughter to going back to work, the community I have found through blogging has been so supportive.  When I started my blog my goal was to share my recipes and to demonstrate that cooking and baking don’t have to be scary and intimidating. I didn’t realize the sense of community that I would gain along the way.  There are some days when I wonder if blogging is really worth all of the trouble, then I think about the e-mail I received, thanking me for highlighting working mamas.  Or the comment from a new mama telling me that my post helped her continue breastfeeding her newborn.  Or the recipe that a reader tried and loved after being afraid to try something from scratch but they tried my recipe anyways. 

This blog has become more than just a place to share recipes and I am so grateful for that.  It may not be a complete picture of my life, but it’s as much as I would like to share and I think that’s good enough.

In the past two years I’ve gone from a single girl to a married working mama. I couldn’t be happier and I’m so excited to continue to share my adventures with you.  Thank you so much for coming along!

My Dinner with Chobani

It’s no secret that I love Greek yogurt.  By far, my favorite brand to use when cooking and baking {or just eating with a spoon!} is Chobani.  So I was really excited when I received an invitation from Chobani to attend their inaugural blogger dinner this past Saturday night at The Federalist in DC.

Jackie and Emily {crouching next to me} were our fantastic hosts from Chobani.  It was really interesting to hear about the history of the company and how it’s grown in just a few years.  From listening to how Emily and Jackie talked about Chobani, it was obvious that they love the product and the company. 

Greeting us when we sat down were these awesome canvas bags full of swag. Since this was my first official blogging event hosted by a company, this is also my first swag bag. I was excited. It’s the little things.

Chef Harper McClure created a menu to highlight the use of Chobani in each course.  And he did not disappoint!

{I normally do not take photos of my food in restaurants but since I was at an event specifically for food bloggers, I made an exception.}

After we put in our orders, baskets of fresh bread were served to the table.  Naturally, I had to eat one of each: a piece of cornbread and a piece of baguette, slathered in butter.

The appetizer was amazing.

White Gazpacho

The gazpacho was so creamy and delicious.  I loved the green grape garnish and the shrimp were absolutely perfect.  I liked it so much that I commented to Jackie that if I weren’t sitting in a restaurant I would have licked my bowl clean. She encouraged me to do it anyway, but I remembered my manners and refrained.

For my entrée I went with the lamb.

Coeur de Terre Pinot Noir, Willamette Valley, Oregon

I was torn between choosing the yogurt poached halibut, because I thought poaching fish in yogurt sounded intriguing, but I went with the lamb because it was paired with a pinot noir. I am a sucker for pinot noir.  Let me tell you, the lamb was incredible.  It was done two ways, as shown above, and I cleaned that plate too.

Confession: I had two servings of the cauliflower. It was that good.  It was buttery, crunchy, slightly sweet, salty and smothered in herbs.  If you don’t like cauliflower, I think this dish will make a believer out of you.

Oddly enough for me, I wasn’t super excited about dessert because I didn’t think I liked panna cotta.  I was wrong.

This panna cotta made a believer out of me.  It was so velvety smooth.  I ate each bite with a piece of shortbread, some preserves and the peppery sauce for as long as it lasted.  Another plate cleaned!

I had a great time talking with other DC area bloggers, Jackie and Emily.  As a working mom, I choose to spend the majority of my free time with my husband and our baby girl but it was fun to get out on my own for a night. I even met up with a friend after dinner for a quick drink before heading home and collapsing into bed way past my bedtime.  Too bad Caroline doesn’t understand the concept of sleeping in just yet ;-) .

Filling My Bowl

All of my life, I’ve had a serious thing for cereal.  We weren’t allowed to have sugar cereals so I grew up eating Grape-Nuts, Cheerios and Rice Krispies.  One day when I was really young, we were almost out of all three so my mom mixed them together for me.  Let me tell you, those three are meant to be together.  First pour in the Grape-Nuts, then the Cheerios and top with the Rice Krispies.  You’ll never eat a regular bowl of cereal again.

Recently, Attune Foods offered to send me samples of their cereals.  After months of religiously eating oatmeal for breakfast, I was excited to get back to my first love: cereal with cold milk.

I poured myself a bowl immediately after pulled these out of the box.  All three of them together, naturally.

I doused the cereal in milk and dug right in.  Happily, the cereal stayed crisp and maintained it’s texture.  I don’t know why I was expected the cereal to be sweet, it wasn’t at all and I liked it that way.

Usually when I eat cereal for breakfast I’ll be hungry an hour or two later.  This cereal kept me full until lunchtime—just as long as oatmeal. Win! 

Over the next week or two I kept eating a bowl over and over again and saying to myself, I’ll use this in a recipe soon.  Like all good things, one day I ran out of cereal.

I was sad because I didn’t get to create a recipe.  As luck would have it, my local Safeway stocks Uncle Sam’s cereal! I guess I can make that recipe after all.

WIAW #3

It’s that time of the week again!  Though I don’t intend for this to become a weekly feature, I’ll participate when I have a good day of food to share.

Breakfast

First iced coffee of the year {yaay!} with Coffeemate and sugar. To eat I toasted some baguette, spread each slice with 1/4 of an avocado, topped with two over easy eggs, salt, pepper and nutritional yeast.  I also had a banana, but I forgot to take a picture. You all know what a banana looks like.

Lunch

This is one of the best parts of work from home days—I can make a grilled cheese sandwich! Two slices of sprouted grain bread, with 1/2 an avocado spread on it, some cilantro, salt and two slices of cheddar cheese.  Cooked on the George Foreman grill, it’s my favorite grilled cheese sandwich.  I also ate a few leftover onion rings, some strawberries and an orange pepper. 

Afternoon Snack

Ashley mentioned this smoothie Tuesday night on Twitter and I just had to make one today for my afternoon snack.  The only modifications I made were to include about a tablespoon of almond butter and ice for a thicker consistency.  It was so good! I will definitely be making this more often. It was my sweet treat of the day without being full of sugar.  Win.

Dinner

While making dinner I snacked on two pickles and a handful of tortilla chips.  The time I spend making dinner is definitely the worst time of the day for me when it comes to mindless eating.  I’m hungry but dinner isn’t ready yet so I’ll just eat whatever I can get my hands on.  There’s a reason we don’t keep sweets in the house!

We’re still working through our Easter ham! So we had that for dinner along with sautéed zucchini and mushrooms.

Snack

Usually I’ll just have some tea and maybe fruit after dinner, but tonight I was really hungry after my Best Body Bootcamp workout, so I came up with this snack sandwich.  I didn’t want to eat a sweet treat since I already had one for the day, so I toasted a sandwich thin and added some almond butter, cinnamon and slices of an organic granny smith apple.  It hit the spot!  I also had my usual cup of Sweet Dreams herbal tea.

That’s what I ate yesterday. It was a bit carb heavy and veggie light, but it was all delicious.
