In the Kitchen {Coming Up}

It’s obvious I’ve been kind of distracted lately.  How could I not be, when I have this little girl next to me at all times of the day?


But let me tell you about my trip to Trader Joe’s yesterday.  1) I was all by myself, which means I may have made a few more impulse buys than normal because I wasn’t trying to get in and out of the store before Caroline woke up :-) 2) I was so drawn to the fall produce!  We missed the farmer’s market due to the weather so I was stocking up for the week at the store.  3) My cart, at the end, looked like it belonged to someone who was dying to get some cooking and baking done.  It’s true, I really am.

Today, I started by making Jenna’s Chicken Tortilla Soup.  It is SO good.  I have tried several different recipes to find the one that will replicate the soup that my husband used to buy at a deli near his office.  This one is the winner.  This recipe yields a substantial amount of soup, so Jeromy can take lunch to work and we can have it for dinner.  A perfect recipe in my book.

Tomorrow, I am making pumpkin bourbon cheesecake to take over to a friend’s house for dinner.  Let me say it again. Pumpkin. Bourbon. Cheesecake.  Could this be the perfect fall dessert?? Time will tell.

Random fact: I have 5 cans of pumpkin in my house.  And one can of pumpkin pie mix.  Oops.

Later in the week I am going to make an apple pie and for the first time, it will be with homemade crust.  I’ve always been intimidated by pie crust, mainly because I don’t want to roll it out, but I’m on maternity leave and I have some time {though not much.  She’s only 7.5 weeks, after all.}

I also bought cauliflower, butternut squash and spaghetti squash—oh, I love fall cooking!

Pumpkin bourbon cheesecake sounds amazing! Can't wait to read about it!
