Pinteresting Recipes 10.2.12

This week I decided to bake something that I had pinned.  As my husband pointed out, we don’t have any gluten restrictions in our house, but I was intrigued by the secret ingredient…chickpeas!

Peanut Butter Chocolate Chip Cookie Dough Bites

 

 

Here’s how mine turned out:

Notes:

  • I used almond butter instead of peanut butter, which changed the baking time to 20 minutes instead of 10.
  • Mine are slightly flatter because of the consistency of the almond butter.
  • The recipes yield says 14 and I made 15 using a cookie scoop instead of my hands.

These cookies are delicious and given that they’re made with chickpeas, almond butter, honey and chocolate chips, they’re pretty guilt free. Even so, I’m bringing them to the office to share. I really like my coworkers.  And I have another can of chickpeas just waiting to be turned into cookies.

You would never guess that the main ingredient is chickpeas from the cookie. I loved these!
