Thanks to Hurricane Sandy, my husband, my daughter and I are all home today! I feel so very fortunate to get to spend our second anniversary together as a family. Maybe we’ll even get to keep our dinner reservations tonight? Either way, the past two years have flown by and there’s no one else I’d rather have by my side than Jeromy. Happy Anniversary, honey, I can’t wait to see what the next year brings!
It’s time for another edition of Pinteresting Recipes! This week I went back to another savory meal. I had high hopes for this recipe and I think I would have LOVED it had I followed it through to the end. Instead, I was lazy and skipped the glaze. BIG mistake!
Toasted Sesame Ginger Salmon

Here’s how mine turned out {it was after the sun set, so iPhone was the best I could do}:

- Like I said above, I was lazy and didn’t make the glaze. I think the glaze is an integral part of the dish and will try it again with the glaze.
- I overcooked the salmon for our taste by following the recipe. After a few minutes I put it on a lower rack and I still overcooked it. Lesson learned: know your oven.
