I didn’t actually make it to the grocery store today. Between my parents visit, looking at houses and a blogger meet-up, I couldn’t squeeze it in. So I’ll go on Tuesday, as you can see, it won’t really affect our menu.
Plan for this week:
Sunday: blogger meet up and leftover chicken enchiladas
Monday: Out to dinner with my aunt who is in town from Texas
Tuesday: Eggplant Parmesan {with my mom’s sauce}
Wednesday: Country Ham Steak with Greek Quinoa Salad {Ham from Polyface Farm in the freezer}
Thursday: Leftovers
Friday: Salmon pasta salad
Saturday: Out to dinner with my best friend who is in town from Massachusetts
For lunches: Chinese crab and corn soup, tuna sandwiches, leftover Greek Quinoa Salad and/or Eggplant Parmesan
{UPDATE} Here’s what $63.64 in groceries looks like:
1 organic eggplant, burrata mozzarella cheese, 6 navel oranges, 3 organic tomatoes, 1 jar kalamata olives, 1 jar pepperoncini, bowtie pasta, 1 bunch asparagus, 1 organic green pepper, 1 bunch scallions, 3 lemon, 2 heads of garlic, 2 shallots, 1 bunch of bananas, 8 oz. uncooked crabmeat, frozen organic corn, organic chicken stock, dill, 1 avocado, 2 mangos, 1 bunch of broccolini and a bag of pita chips.
