What’s For Dinner? Menu Planning Challenge Week 4

Even though it takes a little extra time, I really enjoy meal planning.  It makes it so easy to move things around when the ingredients you need are in the house. Here’s how we did last week:

Sunday: Spaghetti Squash with Mushroom Sauce and Caramelized Onion Mashed Potatoes
Monday: Curried Chicken with Coconut Rice
Tuesday: Toasted Sesame Ginger Salmon, roasted root veggies and quinoa
Wednesday: leftovers for Jeromy, Girls Night with pizza for me
Thursday: tomato sausage risotto chicken and veal saltimbocca {chicken for me, veal for Jeromy}
Friday: tomato sausage risotto chicken and veal saltimbocca {chicken for me, veal for Jeromy}
Saturday: out

This week’s menu:

Sunday: leftovers
Monday: grilled chicken salads
Tuesday: pasta puttanesca
Wednesday: pork loin and veggie stir fry
Thursday: out
Friday: blackened tilapia with broccoli and vegan cheese sauce and spiced acorn squash
Saturday: roast chicken with root vegetables and roasted sweet potatoes

Great job getting all your meals in last week! Mine didn’t go as planned, but this week should be better. I was so distracted by your Flavors of Fall recipes in the sidebar, yum!!

You did really well on your planning. I think having a little room to shuffle things around is always a good idea! I saw your pickled peppers on the sidebar…I just dried a bunch of peppers and am excited about pickling some as well!
