What’s For Dinner? Menu Planning Challenge Week 5

This past week we ended up switching things up a bit.  Monday we had unexpectedly had family in town and everyone came over to our house for takeout, so we ended up scratching the tilapia off the weekly menu. Since I buy it frozen from Trader Joe’s, it’s easy to move that to another week.  I had also planned to serve broccoli with the tilapia and use a package of prepared veggies for the pork stir fry.  Unfortunately, when I opened the package, the majority of the veggies were rotten. So I substituted in the broccoli and onions into the stir fry. Not exactly what was planned but it still tasted great!

Sunday: leftovers
Monday: grilled chicken salads Thai takeout
Tuesday: pasta puttanesca pork loin and veggie stir fry
Wednesday: pork loin and veggie stir fry grilled chicken salads
Thursday: out
Friday: blackened tilapia with broccoli and vegan cheese sauce and spiced acorn squash pasta puttanesca
Saturday: roast chicken with roasted root vegetables and roasted sweet potatoes

Hurricane Sandy!

Our area is supposed to get hit by a lot of wind and rain from Hurricane Sandy. Luckily, we have a gas stove so even if we lose power {very likely} we can still cook.  But we don’t want to be opening and closing the refrigerator so we stocked up on non-perishable soups, grains and pasta sauce.  Once the storm passes and we know when power will be restored I’ll go shopping for the meal plan for the rest of the week.

Stay safe! The hurricane does make meal planning a little tricky. My parents are in PA- I’m curious to see what effects they get from the storm. Nothing down here. :)

Shopping for meals when you don’t expect to have power is more challenging than I thought! We stocked up on bread, peanut butter, canned tuna, bananas and crackers. No planned ‘meals’, but enough food to keep us going if we don’t have power for a few days. Fingers crossed Sandy’s not that bad!
